Ingredients for 4 servings:
- 1 packet of vanilla pudding powder
- 80 g xylitol (sugar substitute)
- 300 ml oat milk (oat drink)
- 250 g quark substitute
- 200 g cream substitute (vegan whipped cream)
- ¼ bottle of rum flavoring
- 1 pack of confectionery (Raffaellos), approx. 230 g
- 750 g strawberries
- 1 dash of lemon juice
- e.g. muesli (crunchy muesli)
- n. B. Desiccated coconut

light summer dessert
Beat the low-fat quark, 40g xylitol, and 1/4 rum flavoring with a mixer until creamy. Set aside 4-6 Raffaellos for decoration, depending on how many people you’re serving. I cooked for 4 people, but it’s easily enough for six! Blend the remaining Raffaellos with 50ml of oat milk using a hand blender. Prepare the vanilla pudding according to the package instructions, but only use 250ml of oat milk and 40g xylitol. Let the pudding cool while stirring. Mix all three ingredients together. Finally, add a good dash of lemon juice. Whip the cream until stiff and carefully fold it into the cream. Then chill everything. Set aside about 4-6 pretty strawberries for decoration. Purée half of the remaining strawberries and chop the other half. Then layer in glasses as follows: strawberry pieces and puree, Raffaello mixture, crunchy muesli (I sprinkled it on by taste, so no quantities are given). Keep in mind that muesli is filling! Crunchy muesli keeps the longest in desserts without becoming sticky. Layer everything like this until the glasses are almost full. Be sure to finish with strawberries and puree. Then sprinkle some more muesli on top and finish with the desiccated coconut. Then add a Raffaello and a strawberry on top. Then refrigerate the dessert for at least 2 hours. Notes: All ingredients can of course be replaced with non-vegan alternatives. The vegan versions were deliberately chosen here as they have less sugar, fat, and calories (especially the vegan whipped cream). This dessert is also deliberately not oversweetened. Add more sugar if needed.
