Ingredients for 4 servings:
- 200 g rhubarb
- 150 ml water
- 4 tsp honey
- 200 g strawberries
- 500 g low-fat yogurt, 1% fat absolute
- 4 packets of vanilla sugar
- 4 mint leaves

Cut the rhubarb into pieces and simmer with 50 ml of water and honey in a non-stick saucepan for about 15 to 20 minutes. Let cool. Set aside 4 strawberries for garnish and cut the remaining berries into pieces. Finely purée the strawberry pieces with the rhubarb compote, yogurt, and the remaining water. Season the lassi with vanilla sugar and divide it among 4 tall glasses. Cut a slit in the center of each of the 4 strawberries so that they can be wedged onto the rim of the glass. Place the mint leaves on top of the yogurt drink and serve cold.
