Strawberry sparkling wine cream

Ingredients for 8 servings:

  • 5 limes or lemons
  • 600 ml sparkling wine, dry
  • 40 g cornstarch
  • 275 g sugar
  • 750 g strawberries
  • 400 g whipped cream
  • 3 egg whites
  • possibly chocolate decoration

Instructions

Working time approx. 20 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 20 minutes

A perennial favorite for guests

Squeeze the juice from the limes or lemons. Top up the juice with the sparkling wine to make 3/4 liter of liquid. Take a little of the juice and sparkling wine mixture and mix it with the cornstarch until smooth. Bring the remaining juice and sparkling wine mixture to a boil with 200g of sugar. Add the mixed cornstarch and bring back to a boil while stirring. Allow the cream to cool completely. Carefully wash and hull the strawberries and pat them dry. Slice some berries for decoration and dice the remaining berries. Whisk the cream and egg whites separately until stiff peaks form. Slowly add the remaining sugar to the beaten egg whites while continuing to beat. Fold in the cream, then the beaten egg whites, into the cooled cream. Fold in the strawberry cubes. Decoratively fill glasses with the cream and strawberry slices. Cover the glasses and refrigerate. You can also decorate them with chocolate figures, such as hearts or eggs (for Easter).
