Ingredients for 1 servings:

  • 110 g margarine (semi-skimmed)
  • 90 g sugar
  • 1 egg(s)
  • 1 pinch of salt
  • 3 drops of bitter almond flavor
  • 85 ml buttermilk
  • 140 g flour
  • ½ tsp baking powder
  • 500 g mixed berries, possibly frozen
  • 40 g flour
  • 3 tbsp oat flakes
  • 75 g brown sugar
  • 1 tsp vanilla sugar
  • 60 g margarine (low-fat)
  • 2 tsp powdered sugar, for dusting

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Suitable for WW, for 12 pieces

Preheat oven to 180°C. Line the bottom of a 28 cm springform pan with baking paper. Combine margarine with sugar, egg, salt, and bitter almond flavoring. Stir in the buttermilk. Mix flour with baking powder, sift over the pan, and fold in. Pour into the springform pan and bake in the preheated oven for 10 minutes. Wash the berries (thaw frozen berries) and spread them over the cake batter. Knead the flour, oatmeal, sugar, vanilla sugar, and margarine into crumbles and spread them over the berries. Bake in the preheated oven for 35 minutes. Let cool, cut into 12 pieces, and dust with powdered sugar.
