Stuffed baked potatoes with mushrooms and ham

Ingredients for 4 servings:

  • 8 large potatoes
  • 100 g cooked ham, cut into fine strips
  • 1 small onion(s), finely diced
  • 8 mushrooms, diced
  • 3 tsp oil
  • 2 tbsp sour cream
  • Salt
  • pepper
  • Paprika powder
  • 1 tbsp breadcrumbs

Instructions

Working time approx. 1 hour; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour 5 minutes

Cook the potatoes in the oven at 225°C for 40-45 minutes, turning frequently. Sauté the ham, onions, and mushrooms in 1 teaspoon of oil in a pan for a few minutes. Add the sour cream and season generously with the spices. Cut a lid off the potatoes, hollow out a little (not too deep, only about a third), and fill with the ham and mushroom mixture. Sprinkle with breadcrumbs and drizzle with the remaining oil. Then place in the oven preheated to 250°C for 5 minutes. Serve with a green salad.
