Stuffed cucumber in spicy sauce

Ingredients for 2 servings:

  • 1 m.-large cucumber(s)
  • 200 g minced meat
  • 50 g ham (Katenschinken), diced
  • 1 medium-sized bell pepper(s)
  • 1 m.-sized onion(s)
  • 1 clove(s) garlic
  • 1 spring onion(s)
  • 150 g herb cream cheese
  • some salt
  • some pepper
  • some chili powder
  • some dill
  • 1 small egg(s)
  • 1 bunch of parsley

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 10 minutes

As a main course or starter

Peel the cucumber, halve it, scoop out the flesh with a spoon, and set it aside for the sauce. Peel and finely dice the onion and garlic. Wash the spring onion and bell pepper. Dice the bell pepper and finely slice the spring onion. Mix the minced meat with the egg, salt, pepper, and half of the onion and divide evenly between the hollowed-out cucumber halves. Join the cucumber halves back together and secure with pins or toothpicks. Place the cucumber in a baking dish and sprinkle with dill. Form any leftover minced meat into small balls and place them in the baking dish. Sauté the ham cubes in a pot, render off the fat, then add the remaining onion cubes, the cucumber flesh, garlic, spring onion, and bell pepper. Simmer with the lid on for about 10 minutes. Stir in the cream cheese, season with salt, pepper, and chili, and scatter over the cucumbers. Bake at 200°C for 30 minutes, garnish with fresh parsley, and serve. Add any side dishes. It can also be served as a starter for 4-5 people without any side dishes.
