Ingredients for 4 servings:
- 4 eggs
- 1 tbsp olive oil
- some lemon juice
- 1 tsp mustard
- 1 tsp tomato paste
- some salt
- some corn from the can
- ½ bell pepper(s), finely chopped

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Boil the eggs hard for 10 minutes. Rinse with cold water and let cool. Then peel and halve lengthwise. Remove the yolks with a teaspoon and place them in a bowl. Mix the yolks with olive oil, lemon juice, mustard, tomato paste, and salt. Divide the mixture between the egg whites and serve with the chopped bell pepper and corn.
