Stuffed kohlrabi

Ingredients for 4 servings:

  • 4 kohlrabi
  • 1 large carrot(s)
  • 150 g crème fraîche
  • 125g Camembert(s)
  • 2 eggs
  • 100 ml cream
  • 1 tbsp parsley, finely chopped
  • salt and pepper
  • 1 tbsp butter for the mold
  • nutmeg

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Peel and wash the kohlrabi and carrot, boil in salted water for 15-20 minutes, and let cool. Hollow out the kohlrabi and chop the insides. Dice the carrot. Remove the rind from the Camembert and mash it with a fork. Combine the crème fraîche with the Camembert, stir in the eggs and cream, and fold in the kohlrabi pieces and carrot cubes. Season with salt, pepper, nutmeg, and parsley. Fill the hollowed-out kohlrabi with the mixture. Pour the remaining mixture into the buttered dish. Place the stuffed kohlrabi on top. Bake in a preheated oven at 200°C for approximately 15-20 minutes.
