Stuffed mushrooms

Ingredients for 4 servings:

  • 500 g mushrooms, giant
  • 300 g minced beef
  • 1 bunch of soup vegetables
  • 2 tbsp tomato paste
  • 1 cup cream cheese with peppers
  • e.g. cheese (Grana Padano)
  • e.g. olive oil

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 55 minutes

Mushrooms stuffed with minced meat

Wash and clean the mushrooms, removing the stems. Brown them lightly in 1 tablespoon of olive oil. Brown the ground beef in 1 tablespoon of olive oil, add tomato paste, and continue to cook. Wash and finely chop the soup vegetables (leeks, carrots, celery), add them to the ground beef, and cook. Add the paprika cream cheese and stir well until the cream cheese is dissolved. Place the mushrooms in a baking dish greased with a little olive oil, fill with the ground beef, and top with freshly grated Grana Padano. Bake in the oven at 180°C for about 20 minutes.
