Cheesecake with raisins and dried apricots

Ingredients for 1 servings:

  • 500 g low-fat curd cheese
  • 250 ml buttermilk (1% fat)
  • 2 m.-sized eggs
  • 2 tbsp wheat flour (type 405)
  • 1 tbsp potato flour
  • 50 g sugar
  • ½ tsp oil for the mold
  • some crumbs (cookie crumbs) for the mold
  • 1 handful of raisins
  • 9 apricot(s), dried

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

light and tasty, not so sweet

Combine the low-fat quark with buttermilk, eggs, raisins, and sugar, then fold in the flour and potato flour. Stir everything until smooth. Lightly grease a round, heat-resistant glass baking dish (28 cm) with oil and sprinkle with finely crushed biscuits. Pour the quark mixture into the baking dish. Lightly press the apricots into the quark mixture. Preheat the oven to 180°C and bake the cake for about 45 minutes. After baking, remove the cake from the oven and let it cool.
