Stuffed mushrooms

Ingredients for 1 servings:

  • 3 large mushrooms
  • some olive oil or sunflower oil (as desired)
  • 1 tbsp olive paste, green, maybe more, or 1 tbsp pesto
  • some Parmesan or cheese of your choice
  • possibly salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

with olive paste and Parmesan

Clean the mushrooms and remove the stems so they can be stuffed. Brush the outside with olive oil, if desired. Mix the olive paste with a little cheese and add it to the mushrooms; you may need more depending on the size of the mushrooms. Then sprinkle with more cheese. Season with salt and pepper, if desired. I would be careful with the salt in the olive paste; you may want to add more salt afterwards. Finally, place everything in the oven at 220°C (top/bottom heat) and cook or grill for about 15 minutes, or cook for a few minutes and then grill briefly for the last 5 minutes. Can be eaten as a main course with some white bread and salad, or served as a grilled side dish.
