Stuffed mushrooms

Ingredients for 4 servings:

  • 8 mushrooms
  • 4 tbsp olive oil
  • 30 g ham (prosciutto), finely chopped
  • 1 garlic clove(s), crushed
  • 2 tbsp white bread crumbs
  • 30 g Parmesan, grated
  • 3 tbsp parsley, chopped

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Preheat oven to 190 degrees Celsius (375 degrees Fahrenheit). Brush an ovenproof dish with oil. Trim and finely chop the mushroom stems. Heat 1 tablespoon of oil in a frying pan, add the prosciutto, garlic, and mushroom stems, and fry for 5 minutes. Mix in a bowl with breadcrumbs, Parmesan cheese, and parsley. Brush the mushroom caps with 1 tablespoon of olive oil and place upside down in the dish. Spread the filling over the mushrooms and bake for 20 minutes. Drizzle with the remaining oil and serve hot or warm.
