Ingredients for 3 servings:
- 3 bell peppers, of your choice
- 250 g minced meat
- 2 spring onions
- 1 garlic clove(s), if desired
- 5 small mushrooms, fresh
- 125 g feta cheese
- 250 ml vegetable stock
- e.g. salt and pepper
- e.g. paprika powder
- olive oil
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour
Dice the spring onions, garlic, mushrooms, and feta cheese. Mix 250 ml of water with a little vegetable stock and pour into a casserole dish. Briefly fry the minced meat in olive oil and season with salt, pepper, and paprika. Add the feta cheese until it has melted slightly, then add the vegetables and mix everything together briefly. Wash the peppers, remove the tops, and cut out the seeds and white ends. Then fill the 3 peppers with the minced meat mixture and vegetables. Close the caps on the peppers and secure them with two toothpicks, if desired. Place the cooked peppers in the casserole dish and finish cooking in a preheated oven at 200°C for approximately 45-60 minutes.
