Stuffed peppers with ground turkey and brown rice

Ingredients for 2 servings:

  • 150 g minced turkey
  • 100 g brown rice
  • 15 g tomato paste
  • 20 g olive oil
  • 2 peppers
  • 2 onions
  • 250 ml water for the rice
  • 200 ml water for the sauce
  • salt and pepper
  • a few stalks of parsley

Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes

Cook the rice in 250 ml of salted water for about 30 minutes (brown-grain rice takes a little longer). Meanwhile, peel and dice the onions. Wash and chop the parsley. Deseed the peppers. Mix the ground turkey with the onions, parsley, and cooked rice and season with salt and pepper. Stuff the peppers with the ground meat mixture. Mix the tomato paste with oil, spices, and 200 ml of water in a saucepan. Add the stuffed peppers to the pan and simmer for 30 minutes. Tip: Season the tomato paste, oil, and water mixture with a little vegetable stock.
