Clean, wash, and slice the leek into rings. Heat the fat and sauté the leek for about 5 minutes, stirring constantly. Stir in the cheese. Season with salt and pepper and simmer for about 5 minutes. Mix the breadcrumbs and milk and let them swell. Peel the onions and garlic and finely dice. Knead the minced meat, ground beef, onions, garlic, egg, breadcrumbs, and mustard. Season with salt and pepper. Lay two pieces of cling film on a work surface (40 x 40 cm), spread the minced meat dough on it into a square (approx. 30 x 30 cm). Spread 1/3 of the leek mixture onto the center of the dough. Use the film to roll it up into a log, pressing the dough together firmly. Coat the meatloaf in the sautéed onions and place it on the greased roasting pan. Cook in a preheated oven at 150°C for about 1 hour. Cover with aluminum foil if necessary. Remove the roast and let it rest briefly. Heat the remaining vegetables. Slice the roast and serve with the vegetables. Garnish with parsley.
