Ingredients for 4 servings:
- 4 sweet potatoes (300 g each)
- 1 clove(s) garlic, finely diced
- 1 medium-sized onion(s), finely diced
- 1 tbsp rapeseed oil
- 100 g minced beef
- 1 tbsp tomato paste, 3-fold concentrated
- 1 shot of dry red wine
- Salt
- Pepper, white, from the mill
- ½ tsp cumin powder
- ½ bunch flat-leaf parsley, chopped
- 50 g Gouda, young, coarsely grated
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 25 minutes
Cook the sweet potatoes in boiling water for about 30-40 minutes, then cut off a lid from each, scoop out the potatoes, and chop the scooped potatoes. Heat the oil in a pan, fry the garlic and onion until translucent. Add the ground beef and fry for about three minutes. Stir in the tomato paste and red wine, and season with salt, pepper, and cumin. Mix in the scooped potatoes and parsley, stuff them into the sweet potatoes, sprinkle with Gouda cheese, and bake in a preheated oven at 200°C (400°F) for about 15-20 minutes.
