Ingredients for 4 servings:
- ½ bunch parsley
- 8 large tomatoes
- Salt
- 750 ml water
- 250 ml milk
- 2 sachets of mashed potato powder, each for 500 ml of liquid
- nutmeg
- 1 tbsp butter
- 400 g minced meat
- 125g mozzarella
- 2 tsp oil
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Wash the tomatoes and cut off one of the tops. Scrape out the seeds and flesh with a spoon. Chop the parsley. Boil the water, add a little salt, pour in the milk, and stir in the mashed potatoes. Season with nutmeg, then stir in the butter and parsley. Transfer the mashed potatoes to a piping bag and fill the tomatoes halfway. Pipe the remaining mashed potatoes into an oiled baking dish. Season the minced pork with salt and pepper. Form into balls and place them in the tomatoes. Place the tomatoes on top of the mashed potatoes and bake under aluminum foil for 20 minutes. Slice the mozzarella. Place the tomato tops on top of the minced pork balls. Drizzle with oil and bake uncovered for about 20 minutes.
