Stuffed turkey schnitzel in hand cheese sauce

Ingredients for 2 servings:

  • 400 g turkey schnitzel
  • 8 slice(s) raw ham, without fat edge
  • ½ cup Skyr
  • 100 g hand cheese
  • salt and pepper
  • Paprika powder
  • 100 ml skimmed milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Dukan, low-carb

Wash the turkey schnitzels and pat dry. Using a large knife, cut them open like a bread roll, making two schnitzels from one. Spread each schnitzel with a little skyr, top with a slice of ham, and fold them shut. Season both sides with pepper, paprika, and a little salt. Cut the hand cheese into small pieces. Sear the schnitzels on both sides. Reduce the heat to medium. Add the skimmed milk and the hand cheese pieces, cover the pan, and simmer over low heat for about 5 minutes. Turn off the heat and add the remaining skyr to the sauce. Season to taste with paprika and pepper. The hand cheese probably adds enough salt. We served it with tomato salad.
