Stuffed zucchini

Ingredients for 2 servings:

  • 1 zucchini, approx. 500 g or more, or 4 small
  • 2 onions
  • 3 cloves garlic
  • 150 g cooked ham
  • 150 g Emmental cheese
  • ½ can pizza tomatoes
  • 6 tbsp olive oil
  • 1 bunch of parsley
  • salt and pepper
  • Paprika powder, sweet
  • oregano
  • marjoram

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 25 minutes

Wash the zucchini and slice it lengthwise. Scoop out the inner flesh with a spoon and chop. Chop the onion and garlic. Wash and chop the parsley. Sauté the zucchini flesh, onion, and garlic in a pan with 5 tablespoons of olive oil, stirring constantly, until almost no liquid remains. Place the pizza tomatoes in a baking dish and season. Place the hollowed-out zucchini in the baking dish. Dice the cooked ham and cheese and stir into the zucchini, onion, and garlic mixture along with the parsley. Season well with salt, pepper, paprika, oregano, and marjoram. Stuff the zucchini with the mixture and drizzle with the remaining olive oil. Bake in a hot oven at 180°C (top/bottom heat) for about 45 minutes. Serve with fresh farmhouse bread.
