Ingredients for 4 servings:
- 2 cups rice
- 1 small can of peas, finely chopped
- 1 red bell pepper(s)
- 6 tomatoes, dried, from the jar
- 3 tbsp ketchup
- Tomato paste
- basil
- salt and pepper
- margarine
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cook the rice according to the package instructions. Drain the water and return the rice to the pot. Add a knob of margarine. Finely dice the bell pepper and sun-dried tomatoes and add them to the rice along with the peas. Stir and gradually add the ketchup and tomato paste until the desired consistency is reached. Season with salt, pepper, and basil. My husband loved the rice.
