Stuffed zucchini from the oven

Ingredients for 4 servings:

  • 2 zucchini, approx. 300 – 340 g each
  • 150 g cream cheese
  • 100 g mushrooms
  • 1 small onion(s)
  • 1 garlic clove(s)
  • e.g. Cheddar cheese or Gouda, grated, approx. 80 – 100 g
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Halve the washed zucchini lengthwise and scoop out the flesh with a spoon. Finely chop the scooped flesh. Mix the chopped mushrooms, onion, and garlic with the zucchini flesh. Add the cream cheese and season with salt and pepper. Mix everything well. Spoon the filling into the scooped zucchini halves and smooth the surface. Place the stuffed zucchini in a lightly greased baking dish. Sprinkle the zucchini with grated Cheddar or Gouda cheese. Bake in a preheated oven at 200°C (top/bottom heat) for about 20-25 minutes, until the cheese is golden brown. Serve with cooked rice or fresh baguette.
