Ingredients for 2 servings:
- 2 small zucchini
- 125 g veggie mince
- 125 g tomato puree
- 100 g feta cheese
- 50 g corn from the can
- some olive oil
- some salt and pepper
- spice(s) as desired

Preheat the oven to 180°C. Wash the zucchini, pat dry, and halve lengthwise. Scoop out the halves with a tablespoon. Brown the veggie mince in a pan with a little olive oil. Add the corn. Crumble the feta and stir in along with the tomato puree. Fill the zucchini halves with the contents of the pan, place them on a baking sheet lined with parchment paper, and bake in the oven for about 25-30 minutes. Enjoy!
