Subz Khara Masala

The perfect subz khara masala recipe with a picture and simple step-by-step instructions.

  • 150 ml Peanut oil
  • 6 tsp Grated ginger
  • 3 tsp Chopped garlic
  • 100 g Spring onions, chopped
  • 100 g Green beans, cut into pieces
  • 100 g Peas green fresh
  • 100 g Carrots in cubes
  • 150 g Potatoes in cubes
  • 250 g Broccoli or cauliflower in small florets
  • 0,5 tsp Turmeric / turmeric
  • 1 tsp Cayenne pepper
  • 100 g Tomatoes, chopped
  • 1 Green chilli pepper, chopped
  • 1 Red chilli pepper, chopped
  • 20 g Coreander green, or in a glass in oil
  • 250 g Yogurt
  • 2 tsp Fenugreek powder or
  • 4 tbsp Fenugreek leaves
  • Salt
  • 250 ml Water
  1. Heat the oil in the wok and stir-fry the ginger and garlic for about 30 minutes. Add onions and fry for about 1 minute. Then add beans, peas, carrots, potatoes and broccoli / cauliflower and sauté for about 1 minute, then turmeric and cayenne pepper and stir well!
  2. Put the chopped tomatoes, chilli peppers and coriander greens in the wok and fry for 1 minute! Then slowly add the yoghurt while stirring and deglaze with water. Bring to the boil, turn the heat down and cook with the lid on for about 15 minutes
  3. Season to taste with salt! AND WHOM’S TOO HOT TO EAT YOGURT!
