Subz Khara Masala
The perfect subz khara masala recipe with a picture and simple step-by-step instructions.
- 150 ml Peanut oil
- 6 tsp Grated ginger
- 3 tsp Chopped garlic
- 100 g Spring onions, chopped
- 100 g Green beans, cut into pieces
- 100 g Peas green fresh
- 100 g Carrots in cubes
- 150 g Potatoes in cubes
- 250 g Broccoli or cauliflower in small florets
- 0,5 tsp Turmeric / turmeric
- 1 tsp Cayenne pepper
- 100 g Tomatoes, chopped
- 1 Green chilli pepper, chopped
- 1 Red chilli pepper, chopped
- 20 g Coreander green, or in a glass in oil
- 250 g Yogurt
- 2 tsp Fenugreek powder or
- 4 tbsp Fenugreek leaves
- Salt
- 250 ml Water
- Heat the oil in the wok and stir-fry the ginger and garlic for about 30 minutes. Add onions and fry for about 1 minute. Then add beans, peas, carrots, potatoes and broccoli / cauliflower and sauté for about 1 minute, then turmeric and cayenne pepper and stir well!
- Put the chopped tomatoes, chilli peppers and coriander greens in the wok and fry for 1 minute! Then slowly add the yoghurt while stirring and deglaze with water. Bring to the boil, turn the heat down and cook with the lid on for about 15 minutes
- Season to taste with salt! AND WHOM’S TOO HOT TO EAT YOGURT!
