Sugar snap peas in port wine sauce

Ingredients for 4 servings:

  • 400 g sugar snap peas
  • 30 g clarified butter
  • 12 garlic cloves
  • 1 piece(s) ginger root
  • 1 onion(s), red
  • 20 g flour
  • 200 ml port wine, red
  • 300 ml vegetable stock
  • n. B. Salt and pepper from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

with lots of garlic

Clean the snow peas, peel and finely chop the garlic cloves, grate the ginger, and finely dice the onion. Heat the clarified butter and sauté the diced onion, ginger, and garlic over low heat. Then add the flour and, stirring vigorously, pour in the port wine and bring to a boil. Now add the vegetable stock and reduce the sauce by about half. Carefully season with salt and pepper. Just before serving, let the snow peas simmer for about 1 minute.
