Ingredients for 1 servings:

  • 140 g of Himalayan balsam flowers
  • 2 liters of water
  • 2 kg sugar
  • 2 organic lemons
  • 20 g citric acid

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 40 minutes

Pick the blossoms on a sunny day. Caution: Bees, bumblebees, and wasps may be in the flowers! Let the blossoms steep with the water in a large pot for approximately 2-24 hours. Now grate the lemon zest, then slice the lemons and let them steep, without the seeds. After the resting time (even 2 hours is sufficient), strain everything. Now add the sugar and citric acid. Bring to a boil and pour into clean bottles, sealing immediately.
