Summer rolls with peanut sauce

Ingredients for 4 servings:

  • 1 pack of rice paper
  • 2 romaine lettuce hearts
  • 1 cucumber(s)
  • 1 carrot(s)
  • 1 bell pepper(s)
  • 2 tbsp peanut cream (paste) or peanut butter
  • 1 tbsp Sriracha sauce to taste
  • 2 tbsp teriyaki sauce or soy sauce
  • 500 g chicken breast, if desired

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, wash the lettuce and vegetables. Leave the romaine lettuce leaves whole. Cut the remaining vegetables into thin strips. Mix the teriyaki sauce, sriracha sauce, and peanut paste in a bowl, then dilute with water until a pleasant sauce consistency is achieved. If you want to make the rolls with chicken breast, you can cut it into strips and fry them. Finally, fill a bowl with warm water and briefly soak a sheet of rice paper in each one. After about 30 seconds, the paper will be tough and no longer brittle. Pull the paper onto a nearby plate, then top with the ingredients and roll it up like a wrap. You can also cut each roll in half again as a snack or for serving.
