Summer salad with mango

Ingredients for 4 servings:

  • 1 mango(s)
  • 1 red bell pepper(s)
  • 1 cucumber(s)
  • 1 lemon(s)
  • 2 tbsp olive oil
  • n. B. herbs, e.g. parsley or coriander leaves
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

fruity refreshing

Peel the mango, remove the flesh from the stone, and finely dice. Peel and deseed the cucumber, dry thoroughly, and finely dice. Wash and finely dice the bell pepper. Combine all ingredients in a bowl with olive oil. Squeeze the lemon and add the juice to the salad. Season with salt and pepper, and garnish with fresh, chopped herbs, if desired. Tip for deseeding the cucumber: Halve the cucumber lengthwise and scoop out the seeds with a teaspoon. Goes perfectly with grilled food.
