Summer salad with melon

Ingredients for 8 servings:

  • 150 g lamb’s lettuce
  • ½ watermelon(s)
  • 150 g feta cheese
  • 20 g pine nuts, roasted
  • some lemon balm
  • 7 tbsp pear juice or orange juice
  • 1 tbsp honey
  • 7 tbsp olive oil
  • 4 tbsp Balsamic vinegar bianco
  • 3 tbsp cream cheese
  • e.g. salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Lamb’s lettuce with watermelon and feta cheese

Wash and tear the lamb’s lettuce. Cut half a watermelon into bite-sized pieces. Also finely chop the feta cheese and place everything in a bowl. For the dressing, combine the juice, honey, oil, balsamic vinegar, cream cheese, and finely chopped lemon balm. Add a little salt and/or pepper to taste. Drizzle the dressing over the salad and scatter the toasted pine nuts on top.
