Summer tortellini salad with ricotta

Ingredients for 4 servings:

  • 500 g tortellini, flavor of your choice
  • 400 g cherry tomatoes
  • 80 g black olives
  • 2 spring onions
  • 50 g sunflower seeds
  • 10 tomatoes, dried, in oil
  • 10 basil leaves
  • 100 g ricotta
  • 2 tbsp dried tomato oil
  • 2 tsp mustard, medium hot
  • 1 tbsp crème fraîche
  • 2 tbsp olive oil
  • 5 tbsp white wine vinegar
  • e.g. salt and pepper

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

A great summery tortellini salad with ricotta that is very easy to make.

For the tortellini salad, cook the tortellini according to the package instructions. Once cooked, drain and place in a bowl. While the tortellini is cooking, halve the cherry tomatoes and slice the olives into rings. Now slice the spring onions and toast the sunflower seeds. Next, slice the pickled tomatoes and basil into strips and add everything to the tortellini in the bowl. Dollop the ricotta over the salad. Finally, combine the dressing and pour it over the salad, tossing everything thoroughly.
