Ingredients for 4 servings:
- 1 avocado(s)
- 1 garlic clove(s)
- 250 ml yogurt
- 250 ml water
- 1 tsp cumin, ground
- ½ lemon(s), the juice
- ¼ bunch coriander, fresh
- 1 chili pepper(s), green
- ½ cup desiccated coconut
- 1 tbsp salt

Halve the avocado and scoop out the flesh from the skin into a bowl. Drizzle with lemon juice, add yogurt and water. Trim and finely chop the chili and garlic. Add to the soup along with the desiccated coconut and season with salt and cumin. Blend everything and sprinkle with fresh, finely chopped cilantro. This soup is perfect for hot summer days!
