Sunken Pear Cake with Almonds Lindau

The perfect sunken pear cake with almonds lindau recipe with a picture and simple step-by-step instructions.

For the dough:

  • 200 g Margarine, (see note)
  • 10 g Sugar, whiter, finer

Eggs, size M

  • 10 g Orange powder (Nutrisari)
  • 200 g Wheat flour, type 405
  • 2 tbsp Baking powder
  • 5 tbsp Orange juice

For covering:

  • 2 tbsp Orange syrup
  • 2 tsp Cinnamon powder
  • 3 great Pears

Also:

  • 3 great Margarine for the mold

To garnish:

  • 200 g Almonds, white

Necessary utensils

  1. A handheld or stand kitchen machine is required to make the batter. The recipe is for a 26 springform pan. Either moisten the springform pan and line it with baking paper or grease it with margarine.
  2. All ingredients should be at room temperature. Liquefy the margarine in a water bath, do not exceed 45 degrees. Weigh out the sugar. Beat the eggs, separate the white and yolks Make sure that no egg yolk ends up in the egg white, otherwise the egg whites will not succeed. Mix the weighed wheat flour with the baking powder and keep it ready.
  3. Put the egg yolks, sugar and orange powder in a mixing bowl and stir together with a whisk until frothy. Add the orange juice by tablespoon. When the mixture no longer crunches while stirring, pour in the melted margarine (it should not be over 40 degrees) in a thin stream while stirring.
  4. Mix the flour with the baking powder well and again add tablespoons to the egg-sugar mixture. Depending on the swellability of the flour, add one tablespoon of orange juice if the dough is too firm. Thoroughly clean the whisk and use a steel, absolutely grease-free mixing bowl. Add a pinch of salt to the egg white and beat at the highest level to the firm egg whites. Fold the egg whites under the dough mass and mix homogeneously with a vertical stirring direction. Preheat the oven to 200 degrees bottom heat.
  5. Pour the finished batter into the mold. Place the pear pieces with the wider side facing outwards on the circumference with the longitudinal axis towards the middle and place the pear half in the middle. Spread the almonds over the cake. Bake the cake on the middle rack in 45 minutes. After 15 minutes, reduce the temperature to 170 degrees. Remove from oven and allow to cool. Cover and leave to mature in the refrigerator overnight. Cut into pieces and serve cool to room temperature.
  6. Note 6 Butter loses its taste during baking and can be replaced by margarine without loss of taste. Margarine usually contains a little salt and there is no need to add salt to the dough.
