quick to prepare, makes 12 servings
Preheat the oven to approximately 200 degrees Celsius (top/bottom heat). Line a muffin tin with muffin cups or spray with baking spray. Cut the peaches into small pieces and pat dry. Combine the flour, baking powder, and pudding powder. Mix the sugar with the vanilla sugar. Cream the butter until fluffy, add the sugar mixture, and continue stirring. Add the eggs one at a time. Add the flour mixture a spoonful at a time and mix everything well. Stir in the yogurt and add a little peach juice. The batter should be neither too runny nor too thick. With these quantities, the batter has just the right consistency. Spoon the batter into the cups, filling them about halfway, and add the peach pieces. Bake on the second rack from the bottom at 200 degrees Celsius (top/bottom heat) for approximately 15-18 minutes. It’s best to do a skewer test. Tip: If you want to prepare the muffins with chocolate chunks, distribute them with the peaches in the middle of the muffins before baking.
