Ingredients for 4 servings:
- 500 g potatoes, mainly waxy, grated and squeezed
- 250 g onion(s), finely chopped or grated
- 100 g cheese (Chester cheese), very finely diced
- ½ bunch flat-leaf parsley, finely chopped
- 65 g flour
- 1 small egg(s)
- Salt
- Pepper, white, from the mill
- Clarified butter or lard
Instructions
Working time approx. 45 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes
Combine potatoes, onions, Cheshire cheese, and parsley with flour and egg, season with salt and pepper, and let the batter rest for about 15 minutes. Heat a generous amount of fat in a large pan, add 2-3 tablespoons of batter to each pancake, flatten and roll into a round, and fry until golden brown, turning occasionally. Serve with a green salad.
