Ingredients for 1 servings:
- 140 g flour
- 75 g sugar
- 250 g ricotta
- 1 packet of Bourbon vanilla sugar
- 5 g baking powder
- 1 pinch of salt
- 2 packs of lemon zest, e.g. from Finesse
- some powdered sugar
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
for the coffee table, makes 12 servings
Combine all dry ingredients in a bowl and mix. Add the ricotta and knead into a smooth dough. If the dough is still too sticky, add a little flour. Divide the dough into 12 portions. Roll into balls with floured hands, flatten, and place on a baking sheet lined with parchment paper. Use a floured wooden spoon handle to poke a hole in the center of each dough ball. Bake in an oven preheated to 160°C for approximately 15-20 minutes, until lightly browned. Remove from the oven and dust the warm rings with powdered sugar. A very light and aromatic coffee pastry.
