Super juicy semolina casserole

Ingredients for 4 servings:

  • 4 eggs
  • 80 g sugar
  • 2 tsp lemon juice
  • n. B. lemon zest
  • 260 g durum wheat semolina
  • 400 ml milk
  • Fat for the mold

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 50 minutes

Preheat oven to 175°C (top/bottom heat). Separate the eggs, beat the egg whites until stiff, then beat the egg yolks with the sugar, lemon juice, and lemon zest until frothy. Then add the semolina and gently fold in the stiffly beaten egg whites. Bake in a greased casserole dish for 20 minutes at 175°C (350°F). Shortly before the end of the baking time, warm the milk and pour it over the casserole. Bake for another 15 minutes, then serve hot. Sprinkle with cinnamon sugar or powdered sugar to taste. A freshly cooked mango and orange compote with honey and a dash of cinnamon goes very well with this dish! 450 kcal per serving.
