Scrambled eggs on salad with truffle oil onions

Ingredients for 2 servings:

  • 5 eggs
  • 1 onion(s)
  • 1 tbsp truffle oil
  • salt and pepper
  • 1 tsp sugar
  • 2 lettuce leaves

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Peel the onion and slice into thin rings. Add 1 tablespoon of truffle oil to a pan and glaze the onion rings with 1 teaspoon of sugar. Meanwhile, whisk the 5 eggs in a bowl and season to taste. Remove the onions from the pan and keep warm, then add the eggs and fry until tender. Arrange the lettuce leaves on plates, add the scrambled eggs, and top with the glazed onions.
