Ingredients for 1 servings:
- 1 apple
- 9 dates, dried
- 1 shot of water
- 4 tbsp coconut oil
- 4 tbsp maple syrup, alternatively honey
- 1 tsp cinnamon powder
- 2 tsp orange oil
- 1 pinch of vanilla powder
- 400 g nuts, mixed
- 5 tbsp oat flakes, fine
- 1 handful of pumpkin seeds
- 4 tbsp chia seeds
- 3 tbsp goji berries
- 100 g cocoa nibs
- 40 g buckwheat flour
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
without white sugar
Peel and core the apple, then place it in a small saucepan with the dates and a splash of water. Bring to a boil briefly. Using a hand blender, puree the apple pieces and dates. Then add the coconut oil, maple syrup, cinnamon powder, orange oil, and vanilla powder and stir to combine. Set aside. Chop the nuts, oats, pumpkin seeds, chia seeds, goji berries, cacao nibs, and buckwheat flour in a food processor and mix to combine. (The finer the ingredients are chopped, the better the granola bar will hold together.) Add the apple and date mixture and mix everything well. It should be a moist mixture. Line a large baking dish with baking paper and spread the mixture on top. Press down firmly with a little force. I usually use a small saucepan to press the mixture together. The mixture should be about 2 cm thick. Bake in an oven preheated to 170°C (top/bottom heat) for about 40 minutes on the middle rack. Let the nut bars cool and then cut into bar shapes. Note: I store the granola bars in a sealed container in the refrigerator. They keep well there for several weeks, if they survive that long. If the granola bars are too sweet for you, you can reduce the amount of maple syrup and dates. My son likes sweet, so the granola bars are flavored accordingly. I personally like them even with half the amount of maple syrup.
