Ingredients for 2 servings:

  • 300 g pork
  • 1 onion(s)
  • 4 juniper berries, crushed
  • 1 clove(s) garlic
  • 300 ml water
  • 2 tsp salt
  • Fat, for the shape

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Austrian recipe

Mix a paste of chopped onion, chopped garlic, and juniper berries. Rub it all over the meat. Bring the salt and water to a boil and let it cool. Place the marinated meat in a stoneware dish and add the salted water. Weigh the meat down with a saucer and a stone, and cover with cling film. Let it marinate in the refrigerator for about three weeks. Turn the meat occasionally during this time. Remove the meat from the brine and rinse thoroughly with cold water. Place it in a greased baking dish and roast in the oven at around 200°C for about 45 minutes.
