Ingredients for 1 servings:

  • 1 cup of rice
  • 3 eggs
  • ½ cucumber(s)
  • ½ bell pepper(s)
  • ½ bunch spring onion(s), the green part
  • 1 carrot(s)
  • shrimp(s)
  • smoked salmon or
  • Surimi
  • 7 nori sheets

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Cook the rice according to the package instructions, ideally a few hours in advance, and let it cool slightly so it is not too wet during preparation. Whisk the eggs and season well. Fry a large omelet in a pan. Cut the omelet into strips about 1.5 cm to 2 cm thick and set aside. Cut the vegetables of your choice into strips and set aside. Spread about 2 tablespoons of rice on a seaweed sheet, leaving a border of about 2 cm free at the top. Place a strip of omelet on the rice and, if desired, spread your preferred fish on top. Add the vegetables and roll tightly. Moisten the top edge with water so that the seaweed sticks together. Cut into pieces and serve.
