Ingredients for 4 servings:
- 500 g Brussels sprouts, fresh
- Salt
- 70 g butter
- 2 handfuls of Parmesan, grated
- Pepper, freshly ground
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Wash the Brussels sprouts, remove any loose leaves, and cook the florets in a relatively small amount of lightly salted water (the vegetables should be covered; add a little more if they are completely absorbed before the end of the cooking time) until tender. The more water they are cooked, the creamier the end result will be. When the water is almost absorbed, add the butter and grated Parmesan cheese, stir well, and let it simmer for a few more minutes over low heat. The whole thing should have a nice creamy consistency (the outer leaves will separate and mix with the butter and melted cheese). Finally, grind fresh pepper over the top. This amount is enough for 4 side dishes or 2 main courses.
