Ingredients for 2 servings:
- 300 g chicken breast, diced
- 5 large potatoes, waxy
- 4 small onions
- 1 small zucchini
- 150 g sugar snap peas
- 150 g green beans
- 1 bell pepper(s), yellow
- 1 bell pepper(s), red
- 500 ml vegetable stock
- 1 cup sour cream
- ½ cup cream cheese spread
- 1 tsp spice mix (tajine spice)
- 2 tsp curry powder
- 1 tsp paprika powder, hot
- 1 tsp cayenne pepper, depending on the desired spiciness
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes
Best prepared in a potjie or heavy pot. Fry the chicken breast cubes in vegetable oil and season with salt and pepper. Then remove the meat from the pot. Meanwhile, clean and chop the potatoes and vegetables. Briefly fry the potato pieces and onions, then deglaze with the vegetable stock. Add the peppers, zucchini, beans, and snow peas, along with the meat and seasonings, and simmer with the lid on low for about 1 hour. Just before the end of the cooking time, stir in the sour cream and processed cheese, then season again to taste.
