Creamy spinach and cheese pasta

Ingredients for 4 servings:

  • 125 g bacon, diced
  • 1 small onion(s), finely diced
  • 1 clove(s) garlic clove(s), finely chopped
  • 1 small chili pepper(s), pitted, finely diced
  • 2 handfuls of baby spinach
  • 750 ml milk
  • 350 g pasta, e.g. penne, fussili
  • 100 g Parmesan, freshly grated, alternatively mild Gouda
  • salt and pepper
  • Oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

One-Pot Pasta

Fry the bacon, diced onion, and garlic in a little oil. Add the chili and sauté for 2 minutes. Add the washed and trimmed spinach leaves and let them wilt. Season with salt and pepper, then pour in the milk and heat through. Then add the pasta, stir everything together, and cook over medium heat according to the instructions. Stir occasionally to prevent sticking. Add a little milk, if desired. The milk should simmer until creamy. Season to taste and either stir in the grated cheese and let it melt, or grate it over the plate.
