Swabian bread soup

Ingredients for 4 servings:

  • 2 slice(s) of bread(s), (country bread)
  • 1 liter meat broth
  • 1 onion(s)
  • 2 eggs
  • 2 tbsp clarified butter
  • ½ bunch parsley

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cut the bread into inch-sized cubes and let them soak in the beaten eggs for about 5 minutes. Season with salt. In the meantime, bring the broth to a boil, finely chop the parsley, and finely dice the onion. Toast the bread cubes in a spoonful of clarified butter and add to the portioned soup. Sauté the onion in the remaining clarified butter and sprinkle over the soup. Garnish with parsley.
