Swabian girls' favorite hazelnut cake

Ingredients for 1 servings:

  • 250 g butter, soft
  • 200 g sugar
  • 4 eggs, size M
  • 1 packet of vanilla sugar
  • 1 pinch of salt
  • 150 g hazelnuts, ground
  • 200 g flour, type 405
  • 50 g cornstarch
  • 1 packet of baking powder
  • 1 tsp lemon zest, grated OR:
  • some flavoring (lemon flavor)
  • 1 tbsp orange peel, grated OR:
  • some flavoring (orange flavor)
  • 1 cup cake icing, hazelnut OR:
  • Powdered sugar OR:
  • frosting

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 15 minutes

Cream the butter with sugar, salt, and vanilla sugar until fluffy, then gradually beat in the eggs vigorously. Add the hazelnuts, lemon and orange zest, or flavorings; add carefully; the cake should have a slight orange flavor, but the flavors shouldn’t overpower it. Sift the flour with the cornstarch and baking powder, then gradually add to the egg, butter, and sugar mixture. Pour the batter into a greased and floured baking pan and bake at 180-200 degrees Celsius for 40-50 minutes. Tip: This cake also works well with whole wheat flour, but only use 150g. The cake also bakes well in silicone molds; however, very delicate molds should still be greased and floured.
