Ingredients for 6 servings:
- 400 g flour
- 4 eggs
- Salt
- 8 tbsp water
- 350 g minced meat, mixed
- 200 g veal sausage meat
- 1 bunch of parsley
- 250 g leaf spinach
- nutmeg
- marjoram
- pepper
- 100 g smoked bacon, diced
- 1 egg white
- 6 onions
- 50 g butter
- e.g. meat broth or vegetable broth
Instructions
Working time approx. 1 hour 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 40 minutes
Blanch the spinach, drain, and roughly chop. Roughly chop the parsley. Roughly mix the minced meat, sausage meat, parsley, and 2 eggs. Fold in the spinach. Season with salt, pepper, marjoram, and nutmeg. Sauté the smoked bacon and add it to the mixture. Knead the flour, the remaining two eggs, a little salt, and 8 tablespoons of water into a pasta dough and roll out thinly. Cut the dough into 15 cm squares. Place the filling on each square, brush the edges of the dough with egg white, and fold the squares together at an angle. Press the edges firmly together. Then let the Maultaschen stand in hot meat or vegetable broth for about 10 minutes. DO NOT boil! In the meantime, slice the onions into thin rings and fry in butter until golden brown. Serve with the Maultaschen.
