Ingredients for 4 servings:

  • 1 kg potatoes, waxy
  • 1 cucumber(s)
  • 2 onions
  • 250 ml broth
  • 5 tbsp vinegar
  • salt and pepper
  • 1 pinch(s) of sugar
  • 1 tbsp mustard, medium hot
  • 4 tbsp oil
  • 1 bunch of chives for sprinkling

Wash the potatoes, boil with the skin on, peel while still warm, and slice thinly. Wash, peel, and slice the cucumber. Mix it with the potatoes in a bowl. Peel and finely chop the onions. Briefly boil the broth with the vinegar, salt, sugar, and onions, then mix with the mustard and oil. Pour the dressing over the salad, mix everything gently, and season with salt and pepper. Finally, cut the washed and shaken-dry chives into tubes and sprinkle over the salad. If the salad is allowed to marinate overnight, it will develop a wonderful flavor. For 4 servings, one serving has 290 kcal.
