Swede curry soup

Ingredients for 4 servings:

  • 500 g turkey or chicken
  • 2 tbsp oil
  • 750 g swede(s)
  • 2 tsp curry
  • 1 liter chicken broth or vegetable broth
  • 1 stalk(s) leek
  • 1 large apple

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Cut the meat into strips and dust with curry powder. Peel the swede and cut it into strips, and cut the leek into rings. Brown the meat in hot oil in a pan, briefly frying the swede sticks and leek. Then deglaze with about 1 liter of stock. Simmer the mixture over low heat for about 30 minutes. Add a diced apple shortly before the end of the cooking time. Also suitable for a meat-free diet; simply omit the meat.
