Ingredients for 4 servings:
- 1 turnip(s) approx. 1 kg
- 1 large leek(s)
- 2 m.-large carrot(s)
- 750 g potatoes
- 2 large onions
- 2 tbsp oil
- 500 ml water
- 1 tbsp sugar
- 2 tbsp vegetable broth, granulated
- 4 sausages (Mettenden), possibly also Pinkel
- salt and pepper
- Cayenne pepper
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel, wash, and dice the turnip, leek, carrots, potatoes, and onions. Heat the oil in a large pot and fry the onions until translucent. Add the remaining vegetables and fry briefly. Sprinkle with 1-2 tablespoons of sugar and let it caramelize slightly. Season with cayenne pepper, then deglaze with 500 ml of water, stir in 2 tablespoons of vegetable stock, and bring to a boil. Add the Mettenden sausages, cover, and simmer for 30-40 minutes, adding a little more water if necessary. Remove the sausages and slice them. Roughly mash the vegetables in the stock, then add the sausages back in. Season to taste with salt and pepper. If you like, you can also add Pinkel to the Mettenden sausages. Then stir them into the stew afterwards.
