Ingredients for 4 servings:
- 600 g chicken breast fillet(s)
- 2 tbsp ginger
- 2 garlic cloves
- 6 tbsp peanut oil
- 8 tbsp soy sauce, light
- 4 tbsp maple syrup
- 1 lime(s)
- 6 tbsp peanut oil
- 1 large onion(s)
- 2 garlic cloves
- 8 tbsp, heaped tomato paste
- 4 tbsp rice wine vinegar
- 2 tbsp maple syrup
- 2 small chili peppers
- 1 small bunch of spring onions
- 1 bell pepper(s)
- 4 vine tomatoes
- 100 ml water
Instructions
Working time approx. 25 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 15 minutes
First, cut the meat into bite-sized pieces. For the marinade, place all ingredients in a bowl. Add the chicken breast fillet and mix well. Let it sit in the refrigerator for at least 20 minutes. For the sauce, put the peanut oil in a pot. Add the meat, marinade, and the onion. Cook for 15 minutes. Add the garlic, chili, tomato paste, rice wine vinegar, soy sauce, and maple syrup. Cook for another 10 minutes. Now add the vegetables and 100 ml of water and cook for another 10 minutes, until the vegetables are tender. If you like your vegetables firm to the bite, cook for just five minutes. Rice goes well with the sauce.
