Ingredients for 4 servings:

  • 1 chicken (ready-to-cook poulard, approx. 1.5 kg)
  • 125 ml chicken broth
  • 8 tomatoes (approx. 750g)
  • 150 g peanut butter or finely ground peanuts
  • 2 zucchini (approx. 200g)
  • salt and pepper
  • rosemary

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Remove the skin from the chicken and cut the chicken into pieces. Rinse the chicken pieces and place them in a wide pot. Pour in the stock and slowly bring to a boil. Pour boiling water over the tomatoes, remove the skins, and add them whole to the meat. Cover and simmer over low heat for about 40 minutes. After 30 minutes of cooking, stir in the peanut butter (peanuts). Season with salt, pepper, and rosemary. Trim the zucchini, removing the blossoms and stem ends. Wash the zucchini and cut into small cubes. Add to the pot 10 minutes before the end of cooking and season again. Long-grain rice or couscous, a coarse wheat semolina cooked in steam, is a delicious side dish.
